Banana Pudding Quick & Easy

For the ingredients you will need: Vanilla Wafers, 6 Bananas, 3 tablespoons of Butter, 3 tablespoons of Flour , 3 cups of Milk, 3 Eggs, Sugar, Vanilla Extract

Utensils: 3 Qt Sauce Pan, Whisk, Large Spoon,Measuring Cup, Measuring spoon, Medium Mixing Bowl, Medium Serving Bowl


Start off by lining the bottom of the serving Bowl with Vanilla Wafers. Once you have the first layer in the bowl, slice three Bananas and spread them evenly over the layer of wafers.

Place a second layer of Wafers over the layer of Bananas.Then another layer of three Bananas, and last, top with another layer of Wafers. You will have 3 layers of Wafers, and 2 layers of Bananas.

Now that you have finished this step, it is time to make the Custard. You will need a 3 quart Sauce pan. Put in 3 tablespoons of butter to melt on medium Heat . Once the butter has melted, mix in 3 tablespoons of flour, mixing it well with the butter, once it is mixed together let the flour cook for about 10 seconds while stirring, then remove it from the heat. You do not want the flour to over cook.
You will now need one cup of milk, very slowly pour a little of the milk into the flour and butter, mixing it in a small amount at a time. You want it to be smooth, if you poured in too much milk with the flour all at once, the Custard will become lumpy. Once you have slowly poured the first cup of milk in, pour in two more cups of milk. Continue stirring while the custard cooks.

Take three eggs and separate the whites from the yokes. Make sure not to spill any yoke into your egg whites. Place them in separate bowls. I usually break the eggs over a bowl, and toss the yoke back and forth from one half of the shell to the other while the egg white drips into a bowl, and then I toss the yoke into another bowl. Once I have separated all three eggs, I take my measuring cup, I dip it into my sauce pan, taking up about half a cup of milk, I mix in the yoke of the eggs with the milk in the measuring cup, by stirring it with a fork, then I pour the milk with the egg yolks into the sauce pan slowly. Remember to continually stir the custard at all times, do not allow the heat to get too hot, if the milk curdles it will ruin the Custard.

After you finish pouring the yoke mixture in, mix in the sugar. The amount of sugar depends on individual taste. If you like it just sweet enough to call it a dessert, you will use 1/2 cup of Sugar, but if you like desserts very sweet, then 1 cup of sugar. I usually choose 1/2 cup of Sugar. Once you have mixed in the Sugar, all you need to do is stir, as it dissolves in the milk, then put in 1 teaspoon of Vanilla Extract.

Now that all the ingredients are in, stir until Custard reaches the right consistency. This will take about 10 minutes. If you are not familiar with the consistency of custard, it is going to be the same consistency of gravy.

Once it is thick, you are ready to pour the Custard over the top of the Wafers and Bananas. Fill the bowl to the top, covering all of the wafers.

Making the Meringue is not difficult as some people may think, it is all a matter of adding the ingredients at the right time. The Egg Whites should be in a mixing bowl. Use a Whisk and whip the Meringue, until it is thick and fluffy. Add 1/3 cup of sugar (again, if you like it really sweet, add 1/2 cup of sugar, Whip again until fluffy, add in 1 teaspoon of Vanilla extract, whip again until all ingredients are mixed in well, and Meringue is fluffy. Pour the Meringue on the Pudding, spreading it over the top. Turn the oven broiler on high. Put the pudding in the oven, under the broiler

Browning the Meringue will take less than a minute. Be careful that it does not burn. Once the Meringue is browned, take it out immediately. Let it cool, and it is ready to eat.

Banana pudding is a Southern favorite. I have always heard that the egg whites should be at room temperature to make a really fluffy meringue. This sounds like a great recipe. Thanks for sharing it and welcome to hubpages!
